Ginger Crust Strawberry Cheesecake

Prep Time: 20 minutes

Bake time: 40 minutes

Ginger crust ingredients:

35 ginger snaps

1/3 cup of brown sugar

1/3 cup of butter

Grind the ginger snaps until its powdery with a few chunks in it. Put the butter in a frying pan with sugar and cook for about 5 minutes.

Cheesecake Ingredients:

3 packs of 8 oz cream cheese


3 large eggs


1 cup of sugar

1 cup of sour cream


1 squeezed lemon

3 tbsp of flour


In a bowl put your cream cheese and sugar and mix until its smooth, then add the eggs, sour cream, lemon and flour. Stir the mix for about 5 minutes. Transfer the mix to the ginger crust and put it in an oven heated at 375 degrees F. It should be done after 40 minutes, turn of the oven and crack it open for it to cool off.

Strawberry topping ingredients:

6 pieces of strawberry

1/3 cup of brown sugar

1/4 cup of water

Cut the strawberries into 4 pieces and add water and sugar. Blend a few of the strawberries with the water and Cook for about 3-5 minutes. After you’re done pour the topping over the cheesecake slowly.
