Beans Stew

Dinner is served!

Prep time: 10 minutes
Cook time: 45 minutes
1.5 Pounds of beans (black eyed peas / pinto beans)
3 cups of oil
12 oz of tomato sauce
1 bulb of onion
1/2 Tsp of Cajun seasoning
1/4 Tsp of salt
2 Habanero peppers
1/2 a clove of garlic
4 oz of ginger

Begin the process by cooking beans for about 30 minutes in a large saucepan. In another pan fry your onions for about five minutes and add your choice of tomatoes, just like making the Ghanaian Tomato Stew. Add in your mix of ginger, garlic, and habanero peppers. Add in your salt and Cajun seasoning and let it cook for about 10 minutes then add the beans and let it simmer for another 10 minutes.
Serve beans with fried plantains (pictured above), rice or gari.
